Bora

On the main street of El Paredon, just steps away from the sand, Bora offers a dining experience unlike anything else in town - where the flavours shift from Central America to the coasts of Portugal and southern Spain. Dinner here is slower, deeper, and made with the kind of care that only comes from lived experience.

Helmed by Chef Gera, who spent over a decade steeped in the flavors of Lisbon and Seville, Bora is a love letter to tradition - with a twist. His dishes play with intensity and texture, layering the bold, the smoky, the sweet and the savory into something unforgettable. Think slow-cooked stews, seafood that sings, and spice blends that linger long after the last bite.

It’s the kind of place that feels like a secret - intimate, warmly lit, and alive with conversation as travelers and locals alike gather over a shared craving for something a little different. During high season, it’s open only a few nights a week - and always worth planning around.
